| PREPARATION | We soak and vapour distill a small amount of red juniper berries in our Pot still to make a spicy fruit gin base to build and layer our flavours. A range of ripe tropical fruits including mango, pineapple, passionfruit, banana and finger lime are prepared for a gin maceration. The gin is then poured over the fruit where it is allowed to macerate and mingle for over two weeks to extract all the ripe aromas and flavour of sunshine, exotic fruits and the warm tropics. On the palate, sweet and juicy pineapple and mango layer with zesty citrus notes from the finger lime and lingering juniper pine-spice warmth. |
